This is a quick recipe that I found in an old microwave cookbook. I have adjusted the recipe slightly and you may need to adjust your microwaving times based on the power of your microwave. (I have already decreased them from the original recipe since my microwave is more powerful than the ones when the cookbook was originally published.)
1 8 oz. can tomato sauce
1/4 t. sugar
1/4 t. crushed red pepper flakes
1/2 lb. ground beef
1/2 lb. ground pork (or pork sausage)
3 T. Italian-style dry breadcrumbs
3/4 t. Italian seasoning
1/2 t. crushed red pepper flakes
1/4 t. salt
In a small bowl, blend tomato sauce, sugar and 1/4 t. crushed red pepper flakes. Set aside.
In medium mixing bowl, combine remaining ingredients. Mix well. Shape into 8-12 meatballs. Place meatballs in 2 qt. glass casserole dish. Cover with wax paper. Microwave for 4 minutes, stirring to rearrange once. If still pink, microwave for another minute. (Meatballs should be firm and no longer pink.) Drain off grease and pour sauce over meatballs. Cover again and microwave 1-2 minutes or until sauce is warm. Let stand, covered, for 5 minutes before serving.
