Recipe of the Month: Beef Stroganoff

CIMG3356Nothing fancy about this recipe but the family loves it. I got this out of a cookbook called One Bite Won’t Kill You. It was written for families with children who are picky eaters. The kids prefer it without mushrooms – actually Lexie prefers hers without the meat too. (Yep, she just wants noodles with butter and Parmesan cheese.)


1 pound lean ground beef

1 onion, minced

1/2 t. dried thyme

1 cup thick-sliced mushrooms

1 T. flour

1 T. tomato paste

1/4 cup beef broth

2-3 garlic cloves, minced

1 8-oz. container of sour cream (I usually only add half a container)

salt and pepper

Hot cooked egg noodles


Brown the beef with the onion over medium heat in a large, heavy skillet. Drain off all but a tablespoon or so of the fat, add the thyme and mushrooms. Cook until the mushrooms give up their liquid.

Sprinkle flour over the contents of the skillet and stir it in; when that’s done, stir in the tomato paste, beef broth and garlic. Cook mixture over medium heat, stirring constantly for 5 minutes, until thickened and amalgamated. Turn down the heat to low and whisk in the sour cream and salt and pepper to taste. Don’t let the mixture boil or the sour cream might curdle.

Serve over noodles.

    I absolutely LOVE stroganoff although I’ve never made it from scratch. I’ve always gotten Hamburger Helper. I’ll have to try this. Awesome!
