I first tasted these bars back in October at our school’s faculty appreciation luncheon. They were marked at Texas Gold/Cheesecake Bars. Everyone loved them. The recipe comes from the Ropin’ the Flavors of Texas cookbook. I made them for my Christmas party and got rave reviews.
1 (18.25 oz) package butter-flavored cake mix
4 large eggs, divided
½ cup butter or margarine, softened
1 (8 oz) package cream cheese, softened
1 teaspoon vanilla extract
1 (16 oz) package powdered sugar
Preheat oven to 350 degrees. Combine cake mix, 1 egg and butter; press into bottom of a greased 9×13-inch baking pan.
Combine cream cheese, remaining 3 eggs and vanilla, beating until well blended. Stir in powdered sugar, beating until smooth. Pour over crust and bake for 10 minutes.
Reduce oven temperature to 325 degrees and bake for 30-40 minutes. Watch carefully so cake does not burn. Cool before serving.
