Recipe of the Month: Posole

P1020912This recipe comes from my mom. It is especially good on cold days and you can adjust the spices to make it hotter (spicy) or mild. She has taken it to potlucks and received many compliments on it. I served it to my husband for the first time this past weekend. I will have to say he liked it as he had three bowls of it!

 Ingredients

1 pork roast, about 1 lb.

3 chicken bouillon cubes

1 t. garlic, minced

1 medium onion, chopped

½ t. oregano

salt and pepper to taste

2 (4 oz) cans chopped green chili

½ t. coriander seeds

1 (15 oz.) can diced tomatoes

2 (15 oz.) cans white hominy, drained

1 ½ T. chili powder

1-2 t. more garlic, minced

 Directions

Cook pork roast with onion, garlic, oregano and bouillon. Add water to cover meat. Bring to a boil and simmer 45-60 minutes. Dice pork. Add remaining ingredients and simmer for 30 minutes. Serve in a bowl with warm flour tortillas.

Serves: 6
