Recipe of the Month: Potato Chip Cookies

potato chip cookiesEver wonder what to do with the broken remains at the bottom of your chip bag? Well this recipe is a great use for those small chips.

Ingredients

1 1/2 cups flour

1/2 t. salt

1 cup butter

2 eggs, beaten

1 cup sugar

1 t. vanilla

1 cup nuts, chopped

2 cups crushed potato chips

Directions

Mix flour and salt. Cut in butter until it resembles crumbs. Add remaining ingredients and mix well. Drop by teaspoon onto ungreased cookie sheet, two inches apart. Pat very thin with back of spoon. Bake at 375 for 6-8 minutes or until edges are lightly browned.

Makes 8 dozen thin cookies or 4 dozen medium size cookies
