Recipe of the Month: Van Patten Chicken

IMG_1002As with many of my recipes featured here, this one I got from my mother. It is one of my daughter’s favorite dishes. It is also one I like to serve to company. I always get rave reviews about it.


8 boneless chicken breasts, flattened by hand

5 slices of bread, crumbled

1 egg

1 clove of garlic, crushed

2 T. milk

1/4 cup of white wine

3/4 cup of chicken bullion

1/2 cup parmesan cheese

1/4 cup cooking oil


Mix egg, milk and garlic. Dip chicken into egg mixture and then into crumbs. Fry in oil until brown. Place in backing dish. Pour wine and bouillon over chicken. Sprinkle with cheese. Bake at 400 degrees, covered, for 10 minutes, then uncovered for 10-15 minutes.

Serves 4-6
