Recipe of the Month: Oreo Pie

CIMG1438I found this recipe online somewhere and my kids love it. I cannot always find an Oreo Pie Crust in the stores so I have substituted a chocolate pie crust with pretty good results.

1 Oreo Pie Crust

16 Oreos

8 oz. Cream Cheese, softened

1/3 cup sugar

1 cup whipping cream

In a small bowl, smash 12 of the Oreo Cookies and set aside.

In a medium bowl using a hand mixer, combine cream cheese and sugar. Beat until light and fluffy.

In a small bowl, whip cream with mixer until peaks form. You can sweeten this with a little powdered sugar before you whip it if you want a sweeter whip cream. Reserve a spoonful of the whipped cream for the top of the pie. Add the rest of it and the smashed Oreos to the cream cheese mixture. Using a rubber spatula, stir gently until well blended and cookies are evenly distributed.

Spoon into the pie crust and refrigerate for 2 hours or until firm.

Before serving: Cut the other 4 Oreos in half. Place halves, cut side down, on top of pie. Add a dollop of whipped cream in the center and dust with Oreo cookie crumbs.
