Recipe of the Month: Gazpacho

P1020469This is a great recipe for the warm summer months. Served cold, this soup is a wonderful mix of vegetables. One of the best things is you can add or adjust the vegetable amounts to get the consistency you like and to feature the vegetables you like. (I don’t like celery so I never add it.)


46 oz bottle of V-8 juice

1 cup water

2 beef bouillon cubes

Salt, pepper and lemon to taste

2 to 3 diced tomatoes

1 diced onion

1 diced cucumber

1 diced green pepper

2-3 stalks of diced celery

Mix and refrigerate at least 2 hours. Vegetables may be adjusted to desired thickness.
