Recipe of the Month: Banana Bread

I know – pumpkin bread or pumpkin rolls may be more in tune with the Fall season but banana bread is one of my kids favorites and an easy way to get rid of those overripe bananas. I got this recipe from my mom many years ago. It came from one of her cookbooks though I don’t know which one so I can’t pass along proper credit.

Ingredients

1/3 cup shortening

1/2 cup sugar

2 eggs

1 3/4 cups flour

1 t. baking powder

1/2 t. baking soda

1/2 t. salt

3-4 very ripe mashed bananas

1/2 to 1 cup chopped walnuts

Cream together shortening and sugar; add eggs and beat well. Mix dry ingredients together – add to creamed mixture alternately with bananas. Blend well after each addition. Stir in walnuts. Pour into well-greased and floured loaf pan (9 1/2” x 5” x 3”). Bake in 350 degree oven for 45 minutes or until done. Remove from pan and cool on a rack.
